Backpacker's Breakfast Cookies (gluten free, vegan)

Backpacker's Breakfast Cookies (gluten free, vegan)

Makes 12 cookies

Time: 35 minutes 



1,5 cups of gluten-free oatmeal
0,5 cup buckwheat flour
1/3 cup coconut oil
1/3 cup maple syrup 
1 flax egg 
1 cup of Deluxe Organic Mix 



  1. Preheat the oven to 350F.

  2. Line a cookie sheet with parchment paper. 

  3. In a bowl, mix together all the dry ingredients.

  4. In a 2nd bowl, mix together all the wet ingredients. 

  5. Stir the wet mixture into the dry mixture and stir gently with a spatula. When the consistency is homogeneous, place about 3 tablespoons of the mixture, shape a ball with your hands, and flatten with a fork. Use your fingers to hold the edges of the cookie. Space 3-4 cm between cookies.

  6. Place the rack in the oven for about 11-13 minutes, until edges are golden. 

  7. Using a spatula, place the cookies on a wire rack and let cool for about 1 hour before eating.


* Serve with fresh fruit and a glass of vegetable milk for a delicious and original breakfast!
