Banana-vanilla pancakes

Lunch is definitely my favorite meal, I would eat it 3 times a day! There are so many possibilities! So this morning, I offer you my favorite fluffy pancake recipe! A delicious breakfast suitable for vegan and gluten-free diets.


Banana-vanilla pancakes

Makes 6 large pancakes



1 large ripe banana
1 1/4 cup coconut milk
2 tbsp melted coconut oil
1 tsp vanilla extract
1 1/2 cup buckwheat flour
2 tsp baking powder
1 tsp ground cinnamon
1/2 teaspoon ground ginger
1/4 tsp ground cloves
pinch of cardamom

1/2 cup ofnatural almonds organic sliced



  1. Place the banana in a large bowl and mash with a fork. Add the milk, coconut oil and vanilla. Mix well.

  2. In another bowl, mix together the flour, baking powder and spices. Add the dry mixture to the wet mixture. Mix until smooth. 

  3. In a non-stick skillet, add a little coconut oil and place about 1/4 cup of the batter mixture in it. cook until edges are golden and turn to finish cooking. Repeat until you have completed all the dough. 

  4. Serve with maple syrup, fresh fruit and sliced ​​almonds.
