These bars are super easy to make and make a delicious, healthy snack.
Cashew coconut bars - 3 ingredients!
Makes 6 servings
Ingredients
- 2 cups of pitted dates
- 3 / 4 cup of organic fine unsweetened coconut
- 2 / 3 cup of organic raw cashews
Instructions
- Place all the ingredients in a powerful food processor.
- Blend for 2-3 minutes or until a grainy texture is obtained. You can also let it mix longer to get a creamier texture to taste.
- Place mixture in a 9 x 9 glass dish lined with parchment paper.
- Press with your hands.
- Place in the refrigerator for 2 hours.
- Cut into pieces to serve.
- Store in the refrigerator in an airtight container for up to a week.
