These bars are super easy to make and make a delicious, healthy snack. 

 

Cashew coconut bars - 3 ingredients!

Makes 6 servings

Instructions

  1. Place all the ingredients in a powerful food processor.
  2. Blend for 2-3 minutes or until a grainy texture is obtained. You can also let it mix longer to get a creamier texture to taste.
  3. Place mixture in a 9 x 9 glass dish lined with parchment paper.
  4. Press with your hands.
  5. Place in the refrigerator for 2 hours.
  6. Cut into pieces to serve.
  7. Store in the refrigerator in an airtight container for up to a week.
