Peanut butter cookies - refined sugar free - gluten free - vegan

If you're looking for a chewy cookie that explodes with peanut butter flavor that is super quick and easy to make with your kids, look no further than these peanut butter cookies !!

Straight out of the oven, these warm and chewy peanut butter cookies melt in your mouth and give you an explosion of delicious peanut butter flavor. With ingredients that are already in your pantry, you can create a sweet, chewy dessert that will delight young and old!

Peanut butter cookies - refined sugar free - gluten free - vegan

Ingredients

  • 1 cup peanut butter (or nut butter of your choice)
  • 1 egg (of flax * for the vegan version)
  • 3/4 cup honey (or maple syrup for the vegan version)
  • 3 tbsp chia seeds
  • to garnish: Organic dry roasted peanuts 

Preparation

  1. Place the ingredients in a bowl and toss to combine.
    Refrigerate 10 minutes to firm the dough, it will be very soft.
  2. Meanwhile, preheat the oven to 350F
  3. Line a baking sheet with parchment paper
  4. Place about 2 tablespoon of cookie dough into a ball and place on a baking sheet 2 inches apart. Form with a fork. Makes about 12 cookies
  5. Garnish with a few peanuts 
  6. Bake for 10 minutes, or until lightly browned on the surface and golden on the edges.
  7. Let cool on the baking sheet.

    Store in an airtight container for up to 4 to 5 days.

*1 tablespoon of ground flax seeds in 2 tablespoons of water which is left to soak for a few minutes replaces an egg (no need to boil).
