Raw mango and coconut bites

Ah exotic fruits! My favorite thing ... besides, I have a lot of difficulty knowing which I prefer ... one thing is for sure, fresh mango and coconut are among my favorites! I am therefore offering you a very creamy, healthy dessert with a firm texture. In addition to being pretty to the eye, it has a downright delicious taste of the tropics!
Raw mango and coconut bites
Preparation: 10 minutes
Refrigeration: 1 hour
Makes 3 servings
Ingredients
- 200g fresh ripe mango flesh (about one red mango without skin and stone)
- 1/3 cup of coconut cream (do not use lightly)
- 1 C. teaspoon agar
- 1/3 cup water
- 40g oforganic raw natural almonds
- 40g of organic fine unsweetened coconut + a little for decoration
- 2 medjool dates
Preparation
- In a food processor, place the almonds and mix to obtain a fine powder.
- Add the fine coconut and mix a little.
- Add the dates, pitted and cut into pieces. Remix to obtain a kind of coarse and lumpy slightly sticky dough.
- Divide the dough into 3 stainless steel circles 7 cm in diameter and press well with your fingers to obtain a uniform thickness that sticks well to the sides of the mold.
- Place the mango flesh and coconut cream in the mixer. Do not mix it up right away.
- In a saucepan, put the agar-agar then the water, mix, and boil 1 min. Remove from the heat and pour into the mixer.
- Mix for a few minutes to obtain a nice homogeneous cream.
- Distribute among the stainless steel circles, sprinkle with grated coconut, and freeze in the refrigerator for at least 1 hour.

Notes
You must use a ripe mango so that the dessert is suf fi ciently sweet and not safe.
