I love mango! This exotic fruit reminds me of the sun, the heat and makes me want to smile. 
As mango is my favorite fruit, when I came across a recipe that combines this beautiful colored fruit with nuts that I cannot do without ... I fell in love! You'll love this color-packed and really delicious recipe!

Cashew cream, mango and raspberry parfaits

 

Ingredients 

1 1/4 cup dried mango slices

1 1/4 cup walnuts cashew

3/4 cup coconut water or water

2 tablespoons of honey

1 tbsp grated lemon zest, plus more for garnish

1 cup chopped fresh mango

1 cup of fresh raspberries

1/4 cup chopped almonds

Method:
  • Place the dried mango slices in a bowl and cover them with lukewarm water.
  • Let stand 2 hours to soften.
  • Place the cashews in a second bowl and cover them with lukewarm water.
  • Let stand 2 hours to soften.
  • Drain the soaked mangoes (discard the liquid) and place them in the bowl of a food processor.Process until smooth.
  • Drain the cashews (discard the liquid) and place them in a blender.
  • Add the water, honey, lemon zest and puree.

 

Assembler

To assemble, place the fresh mango, the cream of cashew, raspberries and mango puree in parfait glasses. Cover with almonds and additional zest, if desired.
