Kale salad with blueberry sauce

I love it when my salads are colorful, the fruits add a delicious punch of flavor besides making them super appealing! 

Here's one of my favorite salads: kale salad with blueberry vinaigrette. I always add Grenoble and thin slices of red onion. It is as tasty as it is beautiful to look at.

I give you the ingredients for 2 beautiful salads-meals, to prepare to enjoy with a person who is dear to you

 

 

Kale salad with blueberry sauce 

Makes 2 servings 

For the salad ...

  • 4 handfuls of kale, washed and drained
  • 1 cup of fresh blueberries
  • 1 / 2 cup of  walnuts
  • 1/4 of a red onion, thinly sliced

For the blueberry vinaigrette ...

  • 1/2 cup fresh blueberries
  • 2 tbsp. pineapple juice
  • 2 c. lemon juice
  • 1 C. maple syrup
  • 1 C. XNUMX/XNUMX teaspoon Dijon mustard
  • 1 garlic clove, finely minced
  • Salt and pepper, to taste

 

Preparation

 

  1. Divide the kale between two plates. Reserve.
  2. In the blender, puree all the vinaigrette ingredients.
  3. Garnish each plate with blueberries, grenoble and red onion.
  4. Divide the vinaigrette between the plates and serve immediately.
