Kale salad with blueberry sauce

I love it when my salads are colorful, the fruits add a delicious punch of flavor besides making them super appealing!
Here's one of my favorite salads: kale salad with blueberry vinaigrette. I always add Grenoble and thin slices of red onion. It is as tasty as it is beautiful to look at.

Kale salad with blueberry sauce
Makes 2 servings
For the salad ...
- 4 handfuls of kale, washed and drained
- 1 cup of fresh blueberries
- 1 / 2 cup of walnuts
- 1/4 of a red onion, thinly sliced
For the blueberry vinaigrette ...
- 1/2 cup fresh blueberries
- 2 tbsp. pineapple juice
- 2 c. lemon juice
- 1 C. maple syrup
- 1 C. XNUMX/XNUMX teaspoon Dijon mustard
- 1 garlic clove, finely minced
- Salt and pepper, to taste
Preparation
- Divide the kale between two plates. Reserve.
- In the blender, puree all the vinaigrette ingredients.
- Garnish each plate with blueberries, grenoble and red onion.
- Divide the vinaigrette between the plates and serve immediately.
