Salad topped with Brussels sprouts

Brussels sprouts ... Another unloved one, that for my part, I LOVE! While waiting for spring, as I am in need of greenery and vitamins, I concocted this delicious vitamin salad, colorful and delicious! 

But did you know that in addition to being delicious, this little green vegetable is packed with vitamin C, bio flavonoids and indoles, two specific phytocomponents which are known for their anti-carcinogenic properties. 

In addition, its high fiber content and low glycemic index make it an ally for diabetics! 

Remember, if you overcook them, these will be bitter! 

So there you go, try this recipe and stock up on vitamins!

 

Salad topped with Brussels sprouts

Servings: 2
Preparation: 10 minutes
  • 250g finely chopped Brussels sprouts
  • 1 bunch of radishes, chopped
  • 50 gorganic natural almonds  hachées
  • 3 oranges in pieces

 

  • 2 tbsp of apple cider vinegar
  • 1 tbsp of maple syrup
  • 1 tsp olive oil
  • 1 tsp of tamari
  • 1 tbsp orange juice
  • freshly ground pepper to taste

 

1. Prepare the vinaigrette: in a bowl, combine all the liquid ingredients, season with pepper to taste.

2. In a bowl, combine all the ingredients. Add the vinaigrette and stir.
