Sweet potato, avocado and walnut toast

Ditch traditional bread for slices of sweet potato in this gluten-free version of classic avocado toast. The nuts offer a bit of crunch while the hot pepper flakes enhance the flavors!

  • 2 sweet potatoes
  • 2 avocados, thinly sliced
  • 1 / 2 cup of walnuts, chopped
  • 1-1 / 2 tsp. hot pepper flakes, more if desired
  • 4 teaspoons of olive oil
  • freshly ground pepper




  1. Slice the sweet potato lengthwise into finger-thick slices.
  2. Preheat the oven to 350 ° F.
  3. Place the sweet potato slices on a baking sheet lined with parchment paper.
  4. Roast for about 15-20 minutes per side, until easily pierced with a fork.
  5. Once the sweet potatoes are cooked, place them on plates and garnish with sliced ​​avocados. Gently mash the avocado with a fork.
  6. Sprinkle with chopped walnuts, red pepper flakes and drizzle with olive oil.
  7. Garnish with freshly ground pepper.
