Sweet potato, avocado and walnut toast
Ditch traditional bread for slices of sweet potato in this gluten-free version of classic avocado toast. The nuts offer a bit of crunch while the hot pepper flakes enhance the flavors!
Sweet potato, avocado and walnut toast
INGREDIENTS
- 2 sweet potatoes
- 2 avocados, thinly sliced
- 1 / 2 cup of walnuts, chopped
- 1-1 / 2 tsp. hot pepper flakes, more if desired
- 4 teaspoons of olive oil
- freshly ground pepper
PREPARATION
- Slice the sweet potato lengthwise into finger-thick slices.
- Preheat the oven to 350 ° F.
- Place the sweet potato slices on a baking sheet lined with parchment paper.
- Roast for about 15-20 minutes per side, until easily pierced with a fork.
- Once the sweet potatoes are cooked, place them on plates and garnish with sliced avocados. Gently mash the avocado with a fork.
- Sprinkle with chopped walnuts, red pepper flakes and drizzle with olive oil.
- Garnish with freshly ground pepper.
